We just love Chipotle in our house. This dinner uses our Chipotle Rub on the steak and Chipotle Paste in the beans. To add freshness I made a green salsa by simply bashing up some chopped tomatillos, jalapenos, onion, coriander with lime juice
For the steak - simply rub with a little oil and our Chipotle Rub, cook on a griddle or BBQ as you like.
To make Mexican style beans, soften 1 chopped onion in a little oil, add 2 tsp cumin powder and 1 tsp paprika. Next stir in 2 tsp Chipotle Paste, then add 2 tins drained and rinsed beans. I used a tin of pinto and a tin of black beans, but use whatever you have. Add a little water then simmer for 10 minutes. You can leave the beans as they are or mash up half of them.
I served dinner tonight with baked potato and roasted red and green peppers
