Fresh tomatillos


Here we are, mid October and still picking fresh tomatillos. We grow tomatillos to make Mexican salsas and sauces, we use them in our cooking classes too.

The tomatillo is a small round fruit with a papery husk. Sometimes green, sometimes purple, they have a tart flavour which mellows when cooked. In our Mexican cooking classes we make a raw tomatillo salsa so you can really taste the tomatillo, but we love to experiment, roasting the tomatillos with different chillies and garlic, sometimes adding coriander and lime juice.
