Masala Chai - the tea Indians have been drinking for thousands of years.
To make this tea I start by toasting cardamom, fennel, cloves, cinnamon and pepper, then give it all a rough grind in the pestle and morter. Ginger powder is added, then I mix these fragrant spices with loose black tea.
The health benefits of drinking this tea are numerous, each spice playing its part. Have one cup a day and see for yourself

For best results make this tea in a saucepan - boil the blend for 5 minutes then add some milk and sugar to taste. Use whole milk, half fat at a push but please not skimmed! Also, brown sugar gives the best flavour. Strain into your favourite teapot and serve.
