Poha is flattened rice and is really quick and easy to cook. Just rinse, soak for 2 minutes then saute/stir fry it with your other ingredients. Eaten in India for breakfast, or as a snack, it can also be served as a side to your curry. Along with the poha we have included some spices to be sizzled at the start, and some chat masala which adds a real spicy, salty, tart finish

serves 4, you will need

2 medium potatoes, 1 small onion, some fresh coriander, lime wedges

suitable for vegetarians, vegans, dairy free and gluten free
