Roast chicken with thyme and citrus

Make a marinade by mixing the following ingredients:
 
A small handful of fresh thyme
 
The zest and juice from one orange and one lemon (stuff what's left up the chickens ass)
 
2 chopped garlic cloves
 
A pinch of chilli flakes
 
Half a teaspoon of paprika
 
1 tbsp olive oil
 
A pinch of salt and pepper

Using a sharp knife cut a few slashes into a chicken. Rub one third of the marinade into the chicken and roast until done.
 
Make a sauce by heating 1 tbsp olive oil in a saucepan. Add 1 tbsp flour and stir fast. Next pour in a glug of white wine and the rest of the marinade. Simmer until it has all come together. You can add any resting juices from the chicken.
