Beef Madras, another British restaurant favourite. Of course Madras is now called Chennai, but Beef Chennai does not have the same ring to it... Anyway, this is a fairly hot curry, one to have simmering away on a cold winters night. It definitely improves with age, and freezes well too.

Serves 4, you will need:

800g diced beef, 2tbsp lemon juice, 1 large onion, 3 cloves garlic, 10g fresh ginger, 2 tomatoes, 2 tbsp tomato puree
