An authentic Vindaloo should be sweet, sour and quite spicy. We like ours to be an enjoyable eating experience, so although this dish is hot it will not blow your head off! This is an easy and fun recipe to make using dried chillies, whole spices and then ground spices, giving a real complex flavour.
