When the weather turns a little grey and cold I turn to soups like this. Easy to make, healthy and comforting, what's not to like? I created this recipe using our Chipotle paste, if you don't have any in your store cupboard replace with Chipotle powder, and add garlic and tomato puree at the first stage.
Ingredients
1 onion, chopped
1 tsp cumin seeds
1 tin chopped tomatoes
400ml chicken stock
1 chicken breast, thinly sliced
1 tin black beans
fresh coriander and lime juice
Method
Heat 2 tbsp olive oil in a saucepan. Add the cumin seeds and the chopped onion. Cook until the onion has softened then add the tin of chopped tomatoes. Simmer for 5 minutes then use a stick blender to blend.
Add the chicken stock and chipotle paste to taste. 1 tbsp should be enough, you can always add more at the end.
Next add the chicken and simmer the soup until the chicken is cooked. Add the black beans, heat through and finish with a good squeeze of lime juice and fresh coriander
Our chipotle paste is made from premium pecan smoked chipotles. Cooked with olive oil, tomato puree, garlic, herbs and spices then blended into an easy to use paste.
