Back from India almost a week and craving the snacks found on the streets. It was either samosas or bhajis, the latter won purely because they are quicker to make.
Here's how:
150g gram flour, 1 tsp salt, 1 tsp chilli powder, 1 tsp coriander powder, 1 tsp cumin powder. Mix together in a bowl then pour in cold water until you have a thick batter.
Finely slice 2 onions. Chop half a bunch of coriander. Dice a green chilli. Stir into the batter with a squeeze of lemon juice.
Heat sunflower/veg oil in a suitable pan. Drop spoonfuls of the onion mix into the hot oil - don't crowd the pan. Fry for 3- 5 minutes until golden. (The frying time depends on the size of your spoonfuls)
Drain on kitchen towel, serve with a dip. Check out my last post for a coriander chilli dip
