Jazzy leftover chicken soup

Due to the coronavirus/being in total lockdown and not really wanting to go shopping I am stretching ingredients whilst using up what fresh produce I have. A simple cooked chicken provides us with one dinner and two lunches, this soup being one of them. It is really easy to make and I call it jazzy because of the fun toppings

Heat some oil in a pan, add 1 tsp cumin seeds and a chopped onion. Soften, then add 2 chopped garlic cloves, a tin of plum tomatoes and some chilli. Use whatever you have, I used 1 tsp chipotle flakes and a pinch of habanero powder. Add a pint of chicken stock, simmer, then blend using a stick blender. Next add some diced leftover chicken and half a red or green pepper, chopped. Add salt to taste, then finish the soup with a good squeeze of lime juice.


In little bowls put chopped onion, lime wedges, chillies, diced avocado and some tortilla chips. Let everyone help themselves, kids love this!
