A client requested this dish at the last minute. I only had frozen chopped spinach but it turned out rather well. Here is my recipe:
Boil 800g cubed potatoes until just tender. (Add a pinch of salt and turmeric to the water) Drain.
In a frying or saute pan heat some ghee or oil and sizzle 2 tsp panch puran. Add 1 sliced onion and cook for 5 minutes. Next add 2 tsp garlic ginger paste and continue to cook for a few minutes more, stirring. Add 1 tsp garam masala and a pinch of chilli powder (or to taste) some chopped spinach, and cook whilst stirring for a few minutes.
Finally tip in the potatoes, season well with salt and pepper. Serve when all is heated through. If you like your spuds buttery add a knob of butter.
Mmm comfort food.....
