An easy but very tasty all in one tray bake, using our za'atar spice blend. Chicken thighs, potatoes cut into fat wedges, carrots, a fennel bulb quartered and one orange.
Mix together the juice of half an orange, 1 tbsp wholegrain mustard, 1 tbsp olive oil, 1 tbsp honey and 1 tbsp of za'atar. I like to add some roughly ground coriander seed too as I think it really brings out the flavour of the sumac, the main ingredient in our za'atar. Add a twist of pepper, slice the remaining half of the orange into wedges, toss everything together and bake at 180C for approx 50 minutes.
