Rummaging through the freezer I found 230g cubed lamb. I took it out with the intention of making lamb burgers but then had a mad craving for a lamb biryani. I marinated the lamb in yoghurt and a few spices - a half teaspoon each of chilli powder, turmeric, cumin, coriander and salt.
But then I couldn't actually be bothered to make a biryani ( it was a hot day, 😒)
Already committed to a curry I fried a sliced onion, added a spoonful of garlic ginger paste, then the lamb and its marinade. Cooked for 10 mins then added a spoonful of tomato puree, a chopped tomato and a little water to cover. I simmered the lamb for an hour then added some spinach (another freezer find) a spoonful of garam masala, a pinch of ground fennel then finished with fresh coriander.
It was actually really nice and just goes to show how easy it is to wing a curry😁
Be adventurous, experiment with spices and don't be scared to adapt a recipe.
