Griddled pineapple and pepper salsa

The perfect accompaniment to tacos, steak or Jerk chicken.
Cut half a fresh pineapple into wedges, do the same with a large red pepper. Griddle them on a BBQ or plancha until they are charred, then dice them as small as you can be bothered. Mix with sliced red onion, diced tomatoes, fresh coriander and lime juice
