Courgette, carrot and red onion bhajis. Naughty but nice.Using up what I had in the fridge. Finely slice half a red onion, grate 1 carrot and half a courgette, as fine as you can. Squeeze the juice from the courgette. Mix with 4 tbsp gram flour, 1 tsp coriander powder, 1 tsp chilli powder, a pinch of turmeric and salt. Add about 4 tbsp cold water. Mix well then drop spoonfuls into hot oil for 3 - 4 minutes.
